Flank/Brisket/Skirt
This area consists of the breast and abdominal region. The Brisket is a very good cut for braising, and is large enough (2-4 lb.) to feed a good sized family. Even though it is much leaner than beef, a corned bison brisket will melt in your mouth. The Flank Steak is a delicious steak, roughly 1 lb. It can be cooked without seasoning, but also takes a marinade quite well. Also in the flank is the Skirt Steak.
This cut has a little more fat than the flank steak, but is just as versatile. It is most commonly used for fajitas. Because supplies are very limited with each of these cuts, please contact us to find out their availability.
