This
area consists of the breast and abdominal region. The Brisket
is a very good cut for braising, and is large enough (2-4
lb.) to feed a good sized family. Even though it is much leaner
than beef, a corned bison brisket will melt in your mouth.
The Flank Steak is a delicious steak, roughly
1 lb. It can be cooked without seasoning, but also takes a
marinade quite well. Also in the flank is the Skirt
Steak.
This cut has a little more fat than the flank steak, but is
just as versatile. It is most commonly used for fajitas. Because
