Chuck
This section comes from the forequarter, extending from the neck to the 5th rib. The most frequently used cut from the chuck is the Chuck Roast. The roast makes for a wonderful family sized meal, especially when cooked in a crock pot and slow roasted throughout the day. Also, the chuck can make a very nice Stew. The meat is quite tender, and works well with just about any recipe. Osso Bucco is found at the shank, which is just above the knee. Since the chuck contains the neck and other muscles which are constantly in motion throughout the life of the bison, much of it is used for Burger.
